Flow Wins First Michelin Star as Philippines' 2027 Guide Expands to 127 Restaurants

A New Star in Makati, a Bigger Dining Guide

Flow, a Makati restaurant blending Peruvian and Filipino flavors, earned its first Michelin Star as the Michelin Guide unveiled its 2027 Manila and Environs & Cebu selection on October 29, 2026. Helm, led by chef Josh Boutwood, retained its Two Michelin Stars and remained the only Philippine restaurant at that level.

The selection recognizes 127 restaurants: 10 with Michelin Stars, 31 with Bib Gourmand distinctions for good cooking at moderate prices, and 86 in the Michelin Selected category. The announcement took place at the Grand Ballroom of the Manila Marriott Hotel in Pasay City, at Newport World Resorts.

All eight restaurants awarded One Michelin Star in the inaugural selection kept their distinction. Flow brings that category to nine restaurants, while Helm accounts for the tenth establishment with stars. No restaurant received Three Michelin Stars.

The guide has grown from 108 establishments in its inaugural selection to 127, an increase of 19, or about 18%. Its expansion reaches beyond the restaurants with stars: the new edition includes 10 additions to Bib Gourmand and 18 to Michelin Selected.

The ceremony also coincided with the Michelin Star's 100th anniversary. For Philippine diners and visitors, the immediate result is a larger directory spanning different prices and dining styles, alongside a largely unchanged group at the highest award levels.

Flow Joins Eight Returning Restaurants

Flow is led by chef Kevin Uy and co-executive chef Gabriel "Gato" Ong. Its combination of Peruvian and Filipino flavors adds a distinct culinary approach to the country's group of restaurants holding One Michelin Star.

The complete One Michelin Star list for the 2027 selection is:

  • Asador Alfonso
  • Celera
  • Flow, newly awarded
  • Gallery by Chele
  • Hapag
  • Inato
  • Kasa Palma
  • Linamnam
  • Toyo Eatery

Michelin defines One Star as high quality cooking worth a stop. Flow's arrival is the only change in membership of this category, with the eight returning restaurants maintaining the recognition they received in the first Philippine selection.

For diners choosing between the nine restaurants, the shared distinction describes the standard of cooking, rather than a single cuisine or format. Flow's Peruvian and Filipino combination sits within a selection that also recognizes the individual approaches of the eight returning kitchens.

Helm Keeps the Highest Distinction Awarded

Helm remains alone in the Philippine guide's Two Michelin Star category. The Makati restaurant serves themed, seasonal menus shaped by Boutwood's British and Filipino roots and Spanish influences.

Two Stars mean excellent cooking worth a detour. Three Stars, the next level, mean exceptional cuisine worth a special journey. With no Three Star award in this selection, Helm continues to hold the highest distinction awarded to a Philippine restaurant.

Seasonal menus change as ingredients become available, while a theme gives the dishes a common direction. At Helm, those elements form part of a dining experience shaped by Boutwood's background and the kitchen's execution.

The results combine continuity with one new arrival: Helm retained Two Stars, all eight previous recipients retained One Star, and Flow joined them. The number of restaurants with stars consequently rose from nine to 10, an increase of roughly 11%.

Bib Gourmand Broadens the Choice at Moderate Prices

The Bib Gourmand category grew from 25 restaurants in the inaugural selection to 31 in the 2027 edition. It recognizes good quality cooking at moderate prices, giving diners a separate way to find places where food and value are central to the recommendation.

Ten restaurants newly entered the category:

  • Apag Marangle
  • ATO-AH
  • Azela
  • Balay Dako
  • Bawai's Vietnamese Kitchen
  • Butcher Boy
  • C.H.E. Bacolod Chicken House Express
  • Kalipay!
  • Tatang's Lechon
  • Tito Boy

The returning group includes Abaseria Deli & Cafe, Bolero, Brick Corner, Cabel, Cochi, Em Ha Noi, Esmen, Kumba, La Pita, Lampara, Lasa, Los Tacos, Manam at the Triangle, Morning Sun Eatery, Palm Grill, Pilya's Kitchen, Sarsa, Some Thai, Taqueria Franco, The Pig & Palm and The Underbelly.

The category's total increased by six restaurants, or 24%, even though 10 names are new to it. Those figures describe different things: additions count restaurants entering the category, while the total reflects its membership after all changes between editions. Bib Gourmand now accounts for nearly one quarter of the 127 restaurants recognized.

Michelin Selected Makes Up Most of the Guide

Michelin Selected accounts for 86 restaurants, about 68% of the full selection. These establishments receive a recommendation in the guide without a Michelin Star or Bib Gourmand distinction.

The category has expanded from 74 restaurants in the inaugural selection, a net increase of 12, or about 16%. Eighteen restaurants are identified as new additions, including Abe, Bombvinos Bodega, Cyria's Kandingan, Digamo, Elaia by Cyma, Haliya, Idalia, Kokeek's Manokan, Kong, Kumedor, Liyab, Makanai, Marjo's Pochero, Mila's Tokwa't Baboy, Playa, Souq and Tadhana.

The returning selection includes restaurants such as Antonio's, Automat, Blackbird, China Blue, House of Lechon, Locavore, Metiz, People's Palace, Ramen Ron, The Test Kitchen, Uma Nota, Yamazato and Your Local. Its size makes this category the largest part of the guide, well beyond the smaller group receiving stars.

Together, Bib Gourmand and Michelin Selected account for 117 of the 127 establishments, or about 92%. Most of the guide's recommendations therefore sit outside the star categories, an important detail for readers deciding which parts of the selection to explore.

Four Awards Recognize People Behind the Restaurants

Francis Lacson of Digamo received the Michelin Young Chef Award, while Frances Tariga of Tadhana received Opening of the Year. Ron Job Sanchez of Automat won the Exceptional Cocktails Award.

Clyde Joshua Zafra, restaurant manager of Tito Boy in Pampanga, was named the Service Award recipient in several accounts of the ceremony; another published winners list names chef Bong Sagmit for that award. The recipient's identity therefore needs confirmation from Michelin.

The individual awards reach across different restaurant categories. Digamo and Tadhana are new Michelin Selected additions, Automat is a returning Selected restaurant, and Tito Boy is a new Bib Gourmand recipient.

The awards also recognize work beyond preparing dishes. Restaurant service shapes how guests are welcomed and looked after, while cocktails form a separate part of the dining experience. Opening of the Year gives a new establishment recognition alongside the guide's restaurant classifications.

How the First Two Editions Fit Together

The 2027 selection is the guide's second Philippine edition. Its publication in October 2026 follows an inaugural ceremony in October 2025, explaining why the guide's edition year is later than the year of its announcement.

  • 1900: Michelin, the French tire company, introduced its guide to support automobile travel.
  • October 30, 2025: The inaugural Philippine selection recognized 108 establishments, including one restaurant with Two Stars, eight with One Star, 25 Bib Gourmand recipients and 74 Michelin Selected restaurants.
  • October 29, 2026: The 2027 selection was unveiled at the Manila Marriott Hotel, recognizing 127 restaurants.

Gallery by Chele also received a Michelin Green Star in the inaugural selection for sustainable gastronomy. That recognition concerns a restaurant's approach to sustainability, while Michelin Stars describe the level of its cooking.

The Department of Tourism helped bring the guide to the Philippines through a partnership intended to promote the country's culinary scene to international travelers. President Ferdinand Marcos Jr. and First Lady Liza Marcos-Araneta attended the ceremony for the 2027 selection.

The geographic scope remains Manila and Environs & Cebu. The increase from 108 to 127 establishments measures growth within that selection, whose coverage brings restaurants in those areas before both local diners and visitors planning trips.

What Michelin Judges in the Kitchen

Michelin uses five criteria to assess cooking: the quality of ingredients, mastery of technique, harmony of flavors, the chef's personality expressed through the food, and consistency. In everyday terms, inspectors consider what goes into a dish, how well it is prepared, how its flavors work together, what makes the cooking individual, and whether the standard holds up.

Consistency matters because diners expect a restaurant to deliver its quality across dishes and visits. Technique concerns the skill used to prepare food, while personality describes the choices that make a kitchen's cooking its own.

Michelin's inspectors work full time and dine anonymously, paying their bills. Across nearly 60 destinations, they eat out more than 250 times a year to assess restaurants through the experience of a paying customer.

The 2027 Philippine results give readers three practical routes into the selection: stars for cooking judged worth a stop or detour, Bib Gourmand for good food at moderate prices, and Michelin Selected for the broadest group of recommended restaurants. Flow supplies the new name among the restaurants with stars, while the larger expansion gives diners many more choices elsewhere in the guide.
